Halloween! We had quite a build up to Halloween. Talking about our costumes for weeks, going to multiple pumpkin patches, carving Jack-O-Lanterns, etc. Corbin has consistently said he wanted to be Superman again this Halloween. Teller changed everyday – first a Firefighter, then a bad guy, then a good guy, and then a lion. I figured we would wait until the day of and ask him then. Teller and Corbin took great naps before trick-or-treating, I even had to wake Teller up around 4pm. He wanted to be a firefighter, so James started to put his costume on. When he saw Corbin dressed as Superman he completely lost it. A complete toddler melt down. He threw himself against the stairs, kicked his feet, and wailed. James and I were clueless as what to do. We tried to explain that we didn’t have another Superman costume – of course that made no sense to him. We suggested alternatives, but nothing but Superman would do. I even had real handcuffs to go with the police officer uniform we have but that wasn’t enticing either. Then we hear Corbin say, “Teller can be Superman, I guess I’ll be a Police Officer. No, I change my mind I want to be Superman, no wait, Teller can be Superman.” With that, he took off Superman, put on the police officer uniform and even gave Teller the matching Superman bucket. Wow, they must love each other. Corbin really impresses me with his ability to be empathetic at times, so sweet, so caring.
We set off for trick-or-treating around 6pm. Our first stop was our next door neighbors, she asked Corbin if he had a joke or song. He volunteered that he did indeed have a song, put his bag down and started to sing:
Jack-o-lantern Jack-o-lantern
what a funny sight
sitting in the window looking
out at the night.
You use to be a pumpkin so small
growing strudy and big on your vine
Now you are a jack-o-lantern
Let your candle light shine bright.
He had hand movements and everything. He continued to sing this song at each house – as the line to the candy grew – he had quite an audience. Teller would even sit down on the steps with the home owners while listening to Corbin sing.
Teller would go up to each house holding a piece of candy saying “Look what I have, look what I have”, so excited about the candy he had already received. The next morning he grabbed his bucket and said, “let’s go, mom, let’s go trick-or-treating”. I had to inform him it is only once a year.
I thought they would last hours trick-or-treating but at about 45 minutes in, Corbin decided he was done and it was time to go home and hand out candy. When we arrived home we ate pumpkin pie with Gigi and Poppy and Papa. Pumpkin pie that Corbin and Teller had made earlier in the day with fresh pumpkins. It was delicious:
1 medium sugar pumpkin
1 tablespoon vegetable oil
1 recipe pastry for a 9 inch single crust pie
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1 teaspoon salt
4 eggs, lightly beaten
1 cup honey, warmed slightly
1/2 cup milk
1/2 cup heavy whipping cream
Cut pumpkin in half, and remove seeds. Lightly oil the cut surface. Place cut side down on a jelly roll pan lined with foil and lightly oiled. Bake at 325 degrees F (165 degrees C) until the flesh is tender when poked with a fork. Cool until just warm. Scrape the pumpkin flesh from the peel. Either mash, or puree in small batches in a blender.
In large bowl, blend together 2 cups pumpkin puree, spices, and salt. Beat in eggs, honey, milk, and cream. Pour filling into pie shell.
Bake at 400 degrees F ( 205 degrees C) for 50 to 55 minutes, or until a knife inserted 1 inch from edge of pie comes out clean. Cool on a wire rack.
As we were eating it, James told the boys it was Jack-o-lantern pie, Corbin looked horrified.
